A healthy, flavorful breakfast casserole made in a crockpot with Mediterranean-inspired ingredients.
Ingredients
- 6 large eggs
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup chopped kalamata olives
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Grease the crockpot with cooking spray or olive oil.
- Whisk the eggs in a large bowl.
- Add all chopped vegetables, feta cheese, and seasonings to the bowl. Mix well.
- Pour the mixture into the crockpot.
- Cook on low for 4 hours or until eggs are set.
- Let it cool slightly before slicing and serving.
Notes
- You can substitute feta with goat cheese for a different flavor.
- Add cooked sausage or turkey bacon for extra protein.
- Store leftovers in an airtight container for up to 3 days.
