Description

A healthy and flavorful breakfast casserole with Mexican-inspired ingredients, cooked in a crockpot for convenience.


Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Grease the crockpot with cooking spray.
  2. In a large bowl, whisk eggs and milk together.
  3. Stir in cheese, black beans, corn, bell pepper, onion, cumin, chili powder, salt, and pepper.
  4. Pour the mixture into the crockpot.
  5. Cook on low for 6-7 hours or on high for 3-4 hours.
  6. Garnish with fresh cilantro before serving.
