A healthy and flavorful breakfast casserole with Mexican-inspired ingredients, cooked in a crockpot for convenience.
Ingredients
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 small onion, diced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh cilantro, chopped
Instructions
- Grease the crockpot with cooking spray.
- In a large bowl, whisk eggs and milk together.
- Stir in cheese, black beans, corn, bell pepper, onion, cumin, chili powder, salt, and pepper.
- Pour the mixture into the crockpot.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- Garnish with fresh cilantro before serving.
Notes
- You can add cooked chicken or turkey for extra protein.
- Store leftovers in an airtight container for up to 3 days.
- Serve with salsa or avocado for extra flavor.
