Description

A healthy and flavorful veggie ramen made in a crockpot with miso and ginger for a rich taste.


Ingredients

  • 4 cups vegetable broth
  • 2 tbsp white miso paste
  • 1 tbsp grated ginger
  • 2 garlic cloves, minced
  • 1 cup sliced mushrooms
  • 1 cup chopped carrots
  • 1 cup sliced bell peppers
  • 2 cups baby spinach
  • 2 packs ramen noodles (discard seasoning)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 green onion, sliced


Instructions

  1. Add vegetable broth, miso paste, ginger, and garlic to the crockpot. Stir well.
  2. Add mushrooms, carrots, and bell peppers. Cook on low for 4 hours.
  3. Stir in spinach, ramen noodles, soy sauce, and sesame oil. Cook for 10 more minutes.
  4. Serve hot, topped with green onions.

  • Adjust miso and soy sauce to taste.
