Description
A healthy and flavorful veggie ramen made in a crockpot with miso and ginger for a rich taste.
Ingredients
- 4 cups vegetable broth
- 2 tbsp white miso paste
- 1 tbsp grated ginger
- 2 garlic cloves, minced
- 1 cup sliced mushrooms
- 1 cup chopped carrots
- 1 cup sliced bell peppers
- 2 cups baby spinach
- 2 packs ramen noodles (discard seasoning)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 green onion, sliced
Instructions
- Add vegetable broth, miso paste, ginger, and garlic to the crockpot. Stir well.
- Add mushrooms, carrots, and bell peppers. Cook on low for 4 hours.
- Stir in spinach, ramen noodles, soy sauce, and sesame oil. Cook for 10 more minutes.
- Serve hot, topped with green onions.
Notes
- Adjust miso and soy sauce to taste.
- Add tofu or cooked chicken for extra protein.
- Store leftovers in an airtight container for up to 3 days.
