Description
A simple and healthy version of orange chicken made in a crockpot.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup orange juice
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tbsp cornstarch
- 1 tbsp water
- 1 tsp orange zest
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp olive oil
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned, about 3-4 minutes.
- Transfer chicken to the crockpot.
- In a bowl, whisk together orange juice, soy sauce, honey, garlic, ginger, orange zest, and red pepper flakes.
- Pour the mixture over the chicken in the crockpot.
- Cover and cook on low for 4 hours or high for 2 hours.
- In a small bowl, mix cornstarch and water. Stir into the crockpot to thicken the sauce.
- Cook for an additional 15 minutes.
- Garnish with green onions before serving.
Notes
- Serve over brown rice or quinoa for a complete meal.
- Adjust red pepper flakes to control spiciness.
- Store leftovers in an airtight container for up to 3 days.
