Description

A simple and healthy version of orange chicken made in a crockpot.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup orange juice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tsp orange zest
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp olive oil
  • 2 green onions, sliced (for garnish)


Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned, about 3-4 minutes.
  2. Transfer chicken to the crockpot.
  3. In a bowl, whisk together orange juice, soy sauce, honey, garlic, ginger, orange zest, and red pepper flakes.
  4. Pour the mixture over the chicken in the crockpot.
  5. Cover and cook on low for 4 hours or high for 2 hours.
  6. In a small bowl, mix cornstarch and water. Stir into the crockpot to thicken the sauce.
  7. Cook for an additional 15 minutes.
  8. Garnish with green onions before serving.
