Description

A healthy twist on pizza casserole made in a crockpot with wholesome ingredients.


Ingredients

  • 1 lb lean ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 can (15 oz) tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded part-skim mozzarella cheese
  • 1/2 cup whole wheat pasta, uncooked


Instructions

  1. Brown the ground turkey in a skillet over medium heat.
  2. Add onion, garlic, bell pepper, and mushrooms. Cook until softened.
  3. Transfer the mixture to the crockpot.
  4. Stir in tomato sauce, oregano, basil, salt, and pepper.
  5. Add uncooked pasta and mix well.
  6. Top with shredded mozzarella cheese.
  7. Cover and cook on low for 4 hours.
  8. Serve hot.

Notes

  • You can substitute ground turkey with ground chicken.
  • Add more vegetables like zucchini or spinach if desired.
