Description
A hearty and healthy pork stew made in a crockpot with fresh vegetables and lean pork.
Ingredients
- 1.5 lbs lean pork shoulder, cubed
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp black pepper
- 1 bay leaf
Instructions
- Place pork, carrots, potatoes, onion, and garlic in the crockpot.
- Add chicken broth, thyme, rosemary, black pepper, and bay leaf.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove bay leaf before serving.
- Serve hot and enjoy.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew in the last 30 minutes.
- Store leftovers in an airtight container for up to 3 days.
