Description

A hearty and healthy pork stew made in a crockpot with fresh vegetables and lean pork.


Ingredients

  • 1.5 lbs lean pork shoulder, cubed
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp black pepper
  • 1 bay leaf


Instructions

  1. Place pork, carrots, potatoes, onion, and garlic in the crockpot.
  2. Add chicken broth, thyme, rosemary, black pepper, and bay leaf.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove bay leaf before serving.
  5. Serve hot and enjoy.

Notes

  • For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew in the last 30 minutes.
