Description
A simple and healthy potato soup made in a crockpot. This recipe is easy to prepare and packed with flavor.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or unsweetened almond milk for lactose-free)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 tsp paprika
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Place potatoes, onion, and garlic in the crockpot.
- Pour vegetable broth over the potatoes.
- Add salt, pepper, thyme, and paprika.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Use a potato masher to partially blend the soup.
- Stir in milk and cook for another 15 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a creamier texture, blend half the soup before adding milk.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat gently on the stove or in the microwave.
