Description

A simple and healthy potato soup made in a crockpot. This recipe is easy to prepare and packed with flavor.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (or unsweetened almond milk for lactose-free)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 tsp paprika
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Place potatoes, onion, and garlic in the crockpot.
  2. Pour vegetable broth over the potatoes.
  3. Add salt, pepper, thyme, and paprika.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Use a potato masher to partially blend the soup.
  6. Stir in milk and cook for another 15 minutes.
  7. Garnish with fresh parsley before serving.

Notes

  • For a creamier texture, blend half the soup before adding milk.
  • Store leftovers in the refrigerator for up to 3 days.
