Description
A simple and flavorful crockpot dal made with red lentils and coconut milk. This dish is packed with protein and fiber, making it a nutritious and satisfying meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- Add all ingredients except lime juice and cilantro to the crockpot.
- Stir well to combine.
- Cook on low for 6 hours or high for 3 hours, until lentils are tender.
- Stir in lime juice before serving.
- Garnish with fresh cilantro.
Notes
- Soak lentils for 30 minutes to reduce cooking time.
- Adjust spices to taste.
- Store leftovers in the fridge for up to 3 days.
