Ingredients

  • 1 cup red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lime juice
  • Fresh cilantro for garnish


Instructions
