Ingredients
- 1 cup dried lentils
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Rinse the lentils and drain them.
- Heat olive oil in a skillet and sauté onion, garlic, bell pepper, and carrot for 5 minutes.
- Transfer the sautéed vegetables to the crockpot.
- Add lentils, vegetable broth, cumin, paprika, salt, and black pepper to the crockpot.
- Stir well to combine.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Serve warm.

- You can add other vegetables like zucchini or sweet potatoes.
