Ingredients

  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Rinse the lentils and drain them.
  2. Heat olive oil in a skillet and sauté onion, garlic, bell pepper, and carrot for 5 minutes.
  3. Transfer the sautéed vegetables to the crockpot.
