Description

A healthy twist on the classic shepherd’s pie made in a crockpot with ground beef, vegetables, and a creamy mashed potato topping.


Ingredients

  • 1 lb lean ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup corn kernels
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 cup beef broth
  • 4 large potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add onion, carrots, and garlic. Cook until softened.
  3. Stir in tomato paste, Worcestershire sauce, peas, corn, and beef broth. Simmer for 5 minutes.
  4. Transfer the mixture to the crockpot.
  5. Boil potatoes until tender. Drain and mash with milk, butter, salt, and pepper.
  6. Spread mashed potatoes over the beef mixture in the crockpot.
  7. Cover and cook on low for 4 hours or high for 2 hours.
  8. Serve warm.
