Description
A healthy twist on the classic shepherd’s pie made in a crockpot with ground beef, vegetables, and a creamy mashed potato topping.
Ingredients
- 1 lb lean ground beef
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup corn kernels
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 cup beef broth
- 4 large potatoes, peeled and cubed
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add onion, carrots, and garlic. Cook until softened.
- Stir in tomato paste, Worcestershire sauce, peas, corn, and beef broth. Simmer for 5 minutes.
- Transfer the mixture to the crockpot.
- Boil potatoes until tender. Drain and mash with milk, butter, salt, and pepper.
- Spread mashed potatoes over the beef mixture in the crockpot.
- Cover and cook on low for 4 hours or high for 2 hours.
- Serve warm.

- Use lean ground beef for a healthier option.
- You can substitute sweet potatoes for regular potatoes.
