Description

A healthy twist on classic lasagna made in a crockpot for easy preparation.


Ingredients

  • 9 lasagna noodles, uncooked
  • 1 lb lean ground turkey
  • 1 jar (24 oz) marinara sauce
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Brown the ground turkey in a skillet over medium heat.
  2. Drain excess fat and stir in marinara sauce.
  3. In a bowl, mix ricotta, egg, basil, oregano, garlic powder, salt, and pepper.
  4. Layer 1/3 of the meat sauce in the crockpot.
  5. Top with 3 lasagna noodles, broken to fit.
  6. Spread half the ricotta mixture over the noodles.
  7. Repeat layers, ending with meat sauce.
  8. Cover and cook on low for 4-5 hours.
  9. Sprinkle mozzarella and Parmesan on top, cover until melted.

Notes

  • Use whole wheat lasagna noodles for extra fiber.
  • Let lasagna rest for 10 minutes before serving.
  • Freeze leftovers for up to 3 months.
