Description
A healthy twist on classic lasagna made in a crockpot for easy preparation.
Ingredients
- 9 lasagna noodles, uncooked
- 1 lb lean ground turkey
- 1 jar (24 oz) marinara sauce
- 1 cup part-skim ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Brown the ground turkey in a skillet over medium heat.
- Drain excess fat and stir in marinara sauce.
- In a bowl, mix ricotta, egg, basil, oregano, garlic powder, salt, and pepper.
- Layer 1/3 of the meat sauce in the crockpot.
- Top with 3 lasagna noodles, broken to fit.
- Spread half the ricotta mixture over the noodles.
- Repeat layers, ending with meat sauce.
- Cover and cook on low for 4-5 hours.
- Sprinkle mozzarella and Parmesan on top, cover until melted.
Notes
- Use whole wheat lasagna noodles for extra fiber.
- Let lasagna rest for 10 minutes before serving.
- Freeze leftovers for up to 3 months.
