Description

A healthy and easy-to-make crockpot spaghetti recipe packed with vegetables and lean protein.


Ingredients

  • 1 lb lean ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, chopped
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz whole wheat spaghetti
  • 1/4 cup grated parmesan cheese (optional)


Instructions

  1. Brown the ground turkey in a skillet over medium heat.
  2. Add onion, garlic, bell pepper, and zucchini. Cook for 5 minutes.
  3. Transfer the mixture to a crockpot.
  4. Add crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Break spaghetti into thirds and add to the crockpot 30 minutes before serving.
  7. Stir occasionally until pasta is tender.
  8. Top with parmesan cheese if desired.

Notes

  • For a vegetarian version, substitute ground turkey with lentils.
  • Leftovers can be stored in the refrigerator for up to 4 days.
