A hearty and nutritious crockpot stew with chickpeas and spinach, perfect for a healthy meal.
Ingredients
- 2 cups chickpeas, soaked overnight
- 4 cups fresh spinach
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 can diced tomatoes (14 oz)
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan and sauté onion, garlic, and bell pepper until soft.
- Transfer the sautéed vegetables to the crockpot.
- Add chickpeas, diced tomatoes, vegetable broth, smoked paprika, cumin, salt, and black pepper to the crockpot.
- Stir well, cover, and cook on low for 6-8 hours or high for 3-4 hours.
- Add spinach during the last 30 minutes of cooking.
- Stir and serve warm.
Notes
- You can use canned chickpeas for a quicker option.
- Adjust spices to taste.
- Top with fresh herbs or lemon juice before serving.
