Description

A hearty and nutritious crockpot stew with chickpeas and spinach, perfect for a healthy meal.


Ingredients

  • 2 cups chickpeas, soaked overnight
  • 4 cups fresh spinach
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a pan and sauté onion, garlic, and bell pepper until soft.
  2. Transfer the sautéed vegetables to the crockpot.
  3. Add chickpeas, diced tomatoes, vegetable broth, smoked paprika, cumin, salt, and black pepper to the crockpot.
  4. Stir well, cover, and cook on low for 6-8 hours or high for 3-4 hours.
  5. Add spinach during the last 30 minutes of cooking.
  6. Stir and serve warm.
