Ingredients
- 2 salmon fillets (6 oz each)
- 1 cup spinach, chopped
- 1/4 cup feta cheese, crumbled
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, mix spinach, feta cheese, garlic powder, lemon juice, salt, and pepper.
- Cut a pocket into each salmon fillet and stuff with the spinach mixture.
- Drizzle olive oil over the stuffed salmon.
- Place salmon in the crockpot and cook on low for 2 hours.
- Serve warm and enjoy.
