Description
A healthy and delicious crockpot filling for zucchini boats, packed with lean protein and fresh vegetables.
Ingredients
- 4 medium zucchinis, halved lengthwise and scooped out
- 1 lb lean ground turkey
- 1 cup diced tomatoes
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add onions, garlic, and bell peppers. Cook until softened.
- Add ground turkey and cook until browned. Drain excess fat.
- Stir in diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 5 minutes.
- Spoon the mixture into the hollowed zucchini boats.
- Place the stuffed zucchinis in a crockpot. Cover and cook on low for 3-4 hours.
- Sprinkle with Parmesan cheese before serving, if desired.
Notes
- Use a spoon to scoop out the zucchini seeds, leaving about 1/4-inch thick shells.
- For a vegetarian option, replace ground turkey with cooked quinoa or lentils.
- Store leftovers in an airtight container for up to 3 days.
