Ingredients
- 4 large potatoes, peeled and diced

- 1 bell pepper, diced
- 1 cup low-sodium vegetable broth

- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tbsp olive oil
Instructions
- Place potatoes, onion, garlic, and bell pepper in the crockpot.
- Add vegetable broth, paprika, thyme, black pepper, and salt.
- Drizzle with olive oil and stir to combine.
- Cover and cook on low for 6 hours or high for 3 hours.
- Stir before serving.
