Description
A hearty and healthy pasta dish featuring tender Swedish meatballs cooked in a creamy sauce with a hint of spice, all made effortlessly in a crockpot.
Ingredients
- 1 lb lean ground turkey
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp allspice
- 1/2 tsp nutmeg
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 cups low-sodium beef broth
- 1 cup light sour cream
- 2 tbsp whole wheat flour
- 1 tbsp Worcestershire sauce
- 8 oz whole wheat pasta
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
Instructions
- Mix ground turkey, breadcrumbs, egg, allspice, nutmeg, pepper, and salt in a bowl. Form into small meatballs.
- Heat olive oil in a pan over medium heat. Brown meatballs on all sides, then transfer to the crockpot.
- In the same pan, sauté onion and garlic until soft. Add to the crockpot.
- Whisk beef broth, sour cream, flour, and Worcestershire sauce in a bowl. Pour over meatballs.
- Cook on low for 4-5 hours or high for 2-3 hours.
- Boil pasta separately according to package instructions. Drain and stir into the crockpot before serving.
Notes
- Use whole wheat pasta for added fiber.
- Substitute Greek yogurt for sour cream if preferred.
- Freeze leftovers for up to 3 months.
