Description

A hearty and healthy pasta dish featuring tender Swedish meatballs cooked in a creamy sauce with a hint of spice, all made effortlessly in a crockpot.


Ingredients

  • 1 lb lean ground turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp allspice
  • 1/2 tsp nutmeg
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 cups low-sodium beef broth
  • 1 cup light sour cream
  • 2 tbsp whole wheat flour
  • 1 tbsp Worcestershire sauce
  • 8 oz whole wheat pasta
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced


Instructions

  1. Mix ground turkey, breadcrumbs, egg, allspice, nutmeg, pepper, and salt in a bowl. Form into small meatballs.
  2. Heat olive oil in a pan over medium heat. Brown meatballs on all sides, then transfer to the crockpot.
  3. In the same pan, sauté onion and garlic until soft. Add to the crockpot.
  4. Whisk beef broth, sour cream, flour, and Worcestershire sauce in a bowl. Pour over meatballs.
  5. Cook on low for 4-5 hours or high for 2-3 hours.
  6. Boil pasta separately according to package instructions. Drain and stir into the crockpot before serving.

Notes

  • Use whole wheat pasta for added fiber.
  • Substitute Greek yogurt for sour cream if preferred.
