Description
A hearty and healthy sweet corn chowder soup made in a crockpot. Perfect for a comforting meal.
Ingredients
- 4 cups sweet corn (fresh or frozen)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 1 carrot, diced
- 4 cups vegetable broth
- 1 cup milk (or almond milk for dairy-free)
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add the sautéed onion, garlic, corn, potatoes, carrot, vegetable broth, thyme, and paprika to the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Blend half the soup for a creamy texture, then return to the crockpot.
- Stir in milk and season with salt and pepper.
- Cook for an additional 15 minutes before serving.
Notes
- For a thicker soup, blend more of the mixture.
- Add cooked chicken or bacon for extra protein.
- Store leftovers in the fridge for up to 3 days.
