Description

A hearty and healthy sweet corn chowder soup made in a crockpot. Perfect for a comforting meal.


Ingredients

  • 4 cups sweet corn (fresh or frozen)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 1 carrot, diced
  • 4 cups vegetable broth
  • 1 cup milk (or almond milk for dairy-free)
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a pan and sauté onion and garlic until soft.
  2. Add the sautéed onion, garlic, corn, potatoes, carrot, vegetable broth, thyme, and paprika to the crockpot.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Blend half the soup for a creamy texture, then return to the crockpot.
  5. Stir in milk and season with salt and pepper.
  6. Cook for an additional 15 minutes before serving.

Notes

  • For a thicker soup, blend more of the mixture.
  • Add cooked chicken or bacon for extra protein.
