A comforting and healthy sweet corn chowder soup made in a crockpot. Perfect for a cozy meal that’s easy to prepare.
Ingredients
- 4 cups fresh or frozen sweet corn
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 medium potatoes, peeled and cubed
- 4 cups vegetable broth
- 1 cup unsweetened almond milk
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and red bell pepper until softened.
- Transfer the sautéed vegetables to the crockpot.
- Add sweet corn, potatoes, vegetable broth, almond milk, smoked paprika, and cumin to the crockpot.
- Stir well and cook on low for 6 hours or high for 3 hours.
- Once cooked, blend half the soup for a creamy texture or leave it chunky.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
Notes
- Use fresh corn for the best flavor, but frozen works too.
- Store leftovers in an airtight container for up to 3 days.
- For a thicker soup, mash some potatoes before blending.
