Description
A hearty and healthy turkey chili made in the crockpot, packed with lean protein and rich flavors.
Ingredients
- 1 lb lean ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup low-sodium chicken broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Brown the ground turkey in a skillet over medium heat until fully cooked.
- Add the onion, garlic, and bell pepper to the skillet. Cook for 3-4 minutes until softened.
- Transfer the turkey mixture to the crockpot.
- Add the black beans, kidney beans, diced tomatoes, tomato sauce, and chicken broth.
- Stir in the chili powder, cumin, paprika, salt, and black pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot with optional toppings like avocado or Greek yogurt.
Notes
- For extra heat, add a diced jalapeño or a pinch of cayenne pepper.
- Store leftovers in an airtight container for up to 3 days.
- Freeze portions for quick meals later.
