Description

A hearty and healthy soup made with turkey, vegetables, and a creamy broth, cooked in a crockpot for easy preparation.


Ingredients

  • 1 lb ground turkey
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen peas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup unsweetened almond milk
  • 2 tbsp cornstarch
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste


Instructions

  1. Brown the ground turkey in a skillet over medium heat, then drain excess fat.
  2. Add turkey, carrots, celery, peas, onion, and garlic to the crockpot.
  3. Pour in chicken broth and stir to combine.
  4. Cover and cook on low for 6 hours.
  5. Mix almond milk and cornstarch, then stir into the soup.
  6. Add thyme, rosemary, salt, and pepper.
  7. Cook for another 30 minutes until thickened.

Notes

  • You can use leftover cooked turkey instead of ground turkey.
  • For a thicker soup, increase cornstarch to 3 tbsp.
  • Store leftovers in the fridge for up to 3 days.
