Description
A hearty and healthy soup made with turkey, vegetables, and a creamy broth, cooked in a crockpot for easy preparation.
Ingredients
- 1 lb ground turkey
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup frozen peas
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup unsweetened almond milk
- 2 tbsp cornstarch
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Brown the ground turkey in a skillet over medium heat, then drain excess fat.
- Add turkey, carrots, celery, peas, onion, and garlic to the crockpot.
- Pour in chicken broth and stir to combine.
- Cover and cook on low for 6 hours.
- Mix almond milk and cornstarch, then stir into the soup.
- Add thyme, rosemary, salt, and pepper.
- Cook for another 30 minutes until thickened.
Notes
- You can use leftover cooked turkey instead of ground turkey.
- For a thicker soup, increase cornstarch to 3 tbsp.
- Store leftovers in the fridge for up to 3 days.
