Description

A hearty and healthy soup made with ground turkey, bell peppers, and a blend of spices, cooked to perfection in a crockpot.


Ingredients

  • 1 lb ground turkey
  • 3 bell peppers, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked brown rice


Instructions

  1. Brown the ground turkey in a skillet over medium heat.
  2. Transfer the turkey to the crockpot.
  3. Add the bell peppers, onion, garlic, diced tomatoes, chicken broth, oregano, basil, salt, and black pepper to the crockpot.
  4. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Stir in the cooked brown rice before serving.
