Description
A hearty and healthy soup made with ground turkey, bell peppers, and a blend of spices, cooked to perfection in a crockpot.
Ingredients
- 1 lb ground turkey
- 3 bell peppers, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked brown rice
Instructions
- Brown the ground turkey in a skillet over medium heat.
- Transfer the turkey to the crockpot.
- Add the bell peppers, onion, garlic, diced tomatoes, chicken broth, oregano, basil, salt, and black pepper to the crockpot.
- Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the cooked brown rice before serving.
Notes
- You can use any color of bell peppers.
- For extra flavor, add a pinch of red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
