A hearty and healthy turkey taco soup made in the crockpot for an easy, flavorful meal.
Ingredients
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup frozen corn
- 2 cups low-sodium chicken broth
- 1 packet taco seasoning
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp paprika
Instructions
- Brown the ground turkey in a skillet over medium heat.
- Add onion and garlic, cook until softened.
- Transfer turkey mixture to the crockpot.
- Add bell pepper, black beans, diced tomatoes, corn, chicken broth, taco seasoning, cumin, chili powder, and paprika.
- Stir to combine.
- Cook on low for 6 hours or high for 3 hours.
- Serve hot with optional toppings like avocado, cheese, or sour cream.
Notes
- For extra heat, add jalapeños or hot sauce.
- Freeze leftovers for up to 3 months.
- For a vegetarian option, omit turkey and use vegetable broth.
