Description
A hearty and healthy vegetable lentil soup made in a crockpot, perfect for a nutritious meal.
Ingredients
- 1 cup dried lentils, rinsed
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach
Instructions
- Add lentils, carrots, celery, onion, garlic, broth, tomatoes, cumin, paprika, salt, and pepper to the crockpot.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Add spinach in the last 30 minutes of cooking.
- Stir well and serve hot.
Notes
- You can use any type of lentils.
- Add more broth if you prefer a thinner soup.
- Store leftovers in the fridge for up to 3 days.
