Description

A healthy twist on walking tacos made in a crockpot with lean meat, fresh veggies, and whole-grain chips.


Ingredients

  • 1 lb lean ground turkey or chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (low sodium)
  • 1 cup shredded reduced-fat cheddar cheese
  • 2 cups whole-grain tortilla chips
  • 1/2 cup plain Greek yogurt (optional)
  • 1/4 cup fresh cilantro, chopped (optional)


Instructions

  1. Brown the ground turkey in a skillet over medium heat. Drain excess fat.
  2. Transfer the turkey to the crockpot. Add black beans, diced tomatoes, corn, bell pepper, onion, garlic, and taco seasoning. Stir well.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Before serving, sprinkle shredded cheese on top and let it melt for 5 minutes.
  5. Serve over whole-grain tortilla chips. Top with Greek yogurt and cilantro if desired.

Notes

  • Use ground chicken for a lighter option.
