Description
A healthy twist on walking tacos made in a crockpot with lean meat, fresh veggies, and whole-grain chips.
Ingredients
- 1 lb lean ground turkey or chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 1 cup frozen corn
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (low sodium)
- 1 cup shredded reduced-fat cheddar cheese
- 2 cups whole-grain tortilla chips
- 1/2 cup plain Greek yogurt (optional)
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Brown the ground turkey in a skillet over medium heat. Drain excess fat.
- Transfer the turkey to the crockpot. Add black beans, diced tomatoes, corn, bell pepper, onion, garlic, and taco seasoning. Stir well.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Before serving, sprinkle shredded cheese on top and let it melt for 5 minutes.
- Serve over whole-grain tortilla chips. Top with Greek yogurt and cilantro if desired.
Notes
- Use ground chicken for a lighter option.
- For extra spice, add diced jalapeños.
- Store leftovers in an airtight container for up to 3 days.
