Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 bunch kale, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a pan and sauté onion and garlic until soft.
  3. Add beans, vegetable broth, salt, and pepper to the crockpot.
  4. Stir in sautéed onion and garlic.
  5. Cook on low for 6-8 hours or until beans are tender.
