A nutritious and hearty soup made with white beans and kale, perfect for a healthy meal.
Ingredients
- 2 cups dried white beans, soaked overnight
- 1 bunch kale, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Drain and rinse the soaked white beans.
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add beans, vegetable broth, salt, and pepper to the crockpot.
- Stir in sautéed onion and garlic.
- Cook on low for 6-8 hours or until beans are tender.
- Add chopped kale and cook for another 30 minutes.
- Serve hot.
Notes
- Soak beans overnight for best results.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
