Description
A flavorful and healthy yellow Thai curry made in a crockpot. Packed with vegetables and aromatic spices, this dish is perfect for a nutritious meal.
Ingredients
- 1 tbsp coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp yellow curry paste
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- 2 carrots, sliced
- 1 bell pepper, diced
- 1 sweet potato, cubed
- 1 cup cauliflower florets
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 1/2 tsp salt
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a pan over medium heat. Sauté onion, garlic, and ginger until fragrant.
- Add yellow curry paste and cook for 1 minute.
- Transfer the mixture to the crockpot.
- Add coconut milk, vegetable broth, carrots, bell pepper, sweet potato, and cauliflower.
- Stir in soy sauce, lime juice, brown sugar, and salt.
- Cook on low for 6 hours or high for 3 hours.
- Garnish with fresh cilantro before serving.
Notes
- Adjust spice level by adding more or less curry paste.
- For extra protein, add tofu or chickpeas.
- Serve over rice or quinoa.
