Description

Ingredients

  • 4 small corn tortillas
  • 2 boneless, skinless chicken breasts, diced
  • 1 cup fresh pineapple, diced
  • 1 jalapeño, seeded and minced
  • 1/2 cup Greek yogurt
  • 1 lime, juiced and zested
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup cilantro, chopped
  • 1/4 cup red onion, finely diced


Instructions

  1. Preheat oven to 400°F. Lightly brush tortillas with olive oil and bake for 8-10 minutes until crispy.
  2. Heat olive oil in a skillet over medium heat. Add chicken, cumin, chili powder, salt, and pepper. Cook until browned, about 6-8 minutes.
  3. Add pineapple and jalapeño to the skillet. Cook for 2-3 minutes until softened.
  4. In a small bowl, mix Greek yogurt, lime juice, and zest to make the lime crema.
  5. Assemble tostadas by layering chicken mixture on crispy tortillas. Top with lime crema, red onion, and cilantro.
