Ingredients
- 2 large cucumbers, diced
- 4 medium tomatoes, chopped
- 1 ripe avocado, cubed
- 1/4 cup red onion, thinly sliced

- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Wash and chop the cucumbers, tomatoes, and avocado.
- Thinly slice the red onion.
- In a large bowl, combine the cucumbers, tomatoes, avocado, and red onion.
- Drizzle with olive oil and lemon juice.
- Season with salt and black pepper.
- Toss gently to mix all ingredients.
