Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 4 cups fresh spinach
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup vegetable broth


Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in curry powder, cumin, turmeric, salt, and pepper.
  4. Add diced sweet potatoes and vegetable broth.
  5. Cover and simmer for 15 minutes or until sweet potatoes are tender.
