Ingredients
- 2 medium sweet potatoes, peeled and diced
- 4 cups fresh spinach
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup vegetable broth
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in curry powder, cumin, turmeric, salt, and pepper.
- Add diced sweet potatoes and vegetable broth.
- Cover and simmer for 15 minutes or until sweet potatoes are tender.
- Add spinach and cook until wilted.
- Serve warm.
