Ingredients
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 red bell pepper, diced
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 4 large eggs
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for 10 minutes, stirring occasionally.
- Season with salt, black pepper, and paprika.
- Add diced red bell pepper, onion, and garlic. Cook for 5 minutes until vegetables soften.
- Create 4 small wells in the hash mixture and crack an egg into each well.
- Cover the skillet and cook for 5-7 minutes until eggs are set to your liking.
- Garnish with fresh cilantro if desired. Serve warm.
