Ingredients
- 2 cups cooked chicken breast, shredded
- 4 large whole wheat tortillas
- 1 cup shredded low-fat mozzarella cheese
- 1/2 cup black beans, rinsed and drained
- 1/4 cup corn kernels
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1 tsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add red onion and cook until softened, about 2 minutes.
- Add shredded chicken, black beans, corn, cumin, salt, and pepper. Stir to combine and cook for 3 minutes.
- Place one tortilla in the skillet. Spread half the chicken mixture on one side.
- Sprinkle half the cheese and cilantro over the chicken mixture.
- Fold the tortilla in half and press down gently.
- Cook for 2-3 minutes per side until golden brown and cheese is melted.
- Repeat with the remaining tortilla and filling.
- Slice each quesadilla into wedges and serve immediately.
