Ingredients

  • 2 cups cooked chicken breast, shredded
  • 4 large whole wheat tortillas
  • 1 cup shredded low-fat mozzarella cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup corn kernels
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add red onion and cook until softened, about 2 minutes.
  3. Add shredded chicken, black beans, corn, cumin, salt, and pepper. Stir to combine and cook for 3 minutes.
  4. Place one tortilla in the skillet. Spread half the chicken mixture on one side.

  6. Fold the tortilla in half and press down gently.
