A hearty and nutritious Chinese vegetable soup packed with fresh ingredients and bold flavors. Perfect for a light meal or side dish.
Ingredients
- 4 cups vegetable broth
- 2 cups water
- 1 cup chopped bok choy
- 1 cup sliced shiitake mushrooms
- 1/2 cup sliced carrots
- 1/2 cup sliced bamboo shoots
- 1/4 cup chopped green onions
- 2 cloves minced garlic
- 1 tbsp grated ginger
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp white pepper
Instructions
- Heat a pot over medium heat. Add sesame oil.
- Sauté garlic, ginger, and green onions for 1 minute.
- Add bok choy, mushrooms, carrots, and bamboo shoots. Stir for 2 minutes.
- Pour in vegetable broth and water. Bring to a boil.
- Reduce heat to low. Add soy sauce and white pepper.
- Simmer for 15 minutes until vegetables are tender.
- Serve hot.
