Ingredients

  • 4 cups vegetable broth
  • 2 cups water
  • 1 cup chopped bok choy
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bamboo shoots
  • 1/4 cup chopped green onions
  • 2 cloves minced garlic
  • 1 tbsp grated ginger
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp white pepper


Instructions

  1. Heat a pot over medium heat. Add sesame oil.
  2. Sauté garlic, ginger, and green onions for 1 minute.
  3. Add bok choy, mushrooms, carrots, and bamboo shoots. Stir for 2 minutes.
  4. Pour in vegetable broth and water. Bring to a boil.
  5. Reduce heat to low. Add soy sauce and white pepper.
  6. Simmer for 15 minutes until vegetables are tender.
  7. Serve hot.
