Ingredients
- 1 lb lean ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth
- 1 packet taco seasoning
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in black beans, corn, diced tomatoes, beef broth, taco seasoning, cumin, and chili powder.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot with optional toppings like shredded cheese, sour cream, or avocado.
