A simple and healthy crockpot recipe for tender ranch-seasoned chicken and potatoes.
Ingredients
- 4 boneless, skinless chicken
- 1.5 lbs baby potatoes, halved
- 1 packet (1 oz) dry ranch seasoning
- 1/2 cup low-sodium chicken broth
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 cup chopped fresh parsley
Instructions
- Place chicken and potatoes in the crockpot.
- In a small bowl, mix ranch seasoning, garlic powder, onion powder, black pepper, and salt.
- Sprinkle the seasoning mixture over the chicken and potatoes.
- Pour chicken broth and olive oil over the ingredients.
- Cover and cook on low for 6 hours or high for 3 hours.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add 1/2 cup diced onions.
- Substitute baby potatoes with sweet potatoes for a variation.
- Store leftovers in an airtight container for up to 3 days.
