Description
A delicious and healthy side dish featuring crispy roasted potatoes with a sweet and savory honey bacon glaze.
Ingredients
- 1.5 lbs baby potatoes, halved
- 4 slices bacon, chopped
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer.
- Bake for 20 minutes.
- While potatoes bake, cook bacon in a pan until crispy. Drain fat and mix bacon with honey.
- Remove potatoes from oven, drizzle with honey bacon mixture, and toss to coat.
- Return to oven and bake for another 10-15 minutes until crispy.
- Sprinkle with fresh parsley before serving.
Notes
- For crispier potatoes, don’t overcrowd the baking sheet.
- Substitute maple syrup for honey if preferred.
- Leftovers keep in the fridge for 3 days.
