Ingredients

  • 1.5 lbs baby potatoes, halved
  • 4 slices bacon, chopped
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Spread potatoes on a baking sheet in a single layer.
  4. Bake for 20 minutes.
  5. While potatoes bake, cook bacon in a pan until crispy. Drain fat and mix bacon with honey.
  6. Remove potatoes from oven, drizzle with honey bacon mixture, and toss to coat.
  7. Return to oven and bake for another 10-15 minutes until crispy.
  8. Sprinkle with fresh parsley before serving.
