Ingredients

  • 12 lasagna noodles
  • 4 cups roasted tomatoes
  • 1 lb lean ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-fat ricotta cheese
  • 1 egg
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions. Drain and set aside.
  3. In a skillet, cook ground turkey, onion, and garlic until turkey is browned.
  4. Mix ricotta cheese, egg, basil, salt, and pepper in a bowl.
  5. Layer noodles, roasted tomatoes, turkey mixture, and ricotta mixture in a baking dish.
  6. Repeat layers, ending with mozzarella and Parmesan cheese on top.
  7. Bake for 30 minutes or until cheese is bubbly and golden.
  8. Let rest for 10 minutes before serving.
