Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup cooked brown rice
  • 1 cup chopped broccoli
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1/4 cup low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix shredded chicken, brown rice, broccoli, carrots, and bell peppers.
  3. Add Greek yogurt, chicken broth, garlic powder, onion powder, black pepper, and salt. Stir well.
  4. Transfer the mixture to a greased casserole dish.
  5. Sprinkle shredded cheddar cheese on top.
  6. Bake for 20-25 minutes until cheese is melted and bubbly.
