A simple and healthy rotisserie chicken casserole packed with flavor and nutrients.
Ingredients
- 2 cups shredded rotisserie chicken
- 1 cup cooked brown rice
- 1 cup chopped broccoli
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup shredded cheddar cheese
- 1/2 cup plain Greek yogurt
- 1/4 cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix shredded chicken, brown rice, broccoli, carrots, and bell peppers.
- Add Greek yogurt, chicken broth, garlic powder, onion powder, black pepper, and salt. Stir well.
- Transfer the mixture to a greased casserole dish.
- Sprinkle shredded cheddar cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
- Use leftover rotisserie chicken for convenience.
- Swap vegetables based on preference.
- Store leftovers in an airtight container for up to 3 days.
