Description

A creamy, flavorful dip made with roasted cauliflower and warm spices. Perfect for parties or as a healthy snack.


Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp tahini (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, cumin, paprika, turmeric, garlic powder, salt, and black pepper.
  3. Spread on a baking sheet and roast for 25 minutes or until golden and tender.
  4. Let cool slightly, then transfer to a food processor.
  5. Add Greek yogurt, lemon juice, and tahini (if using). Blend until smooth.
  6. Adjust seasoning if needed and transfer to a serving bowl.
  7. Garnish with fresh parsley and serve with veggies or pita bread.

Notes

  • Store in an airtight container in the fridge for up to 3 days.
  • For extra flavor, roast a garlic clove with the cauliflower.
  • Replace Greek yogurt with dairy-free yogurt for a vegan version.
