Description
A creamy, flavorful dip made with roasted cauliflower and warm spices. Perfect for parties or as a healthy snack.
Ingredients
- 1 medium cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp tahini (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, cumin, paprika, turmeric, garlic powder, salt, and black pepper.
- Spread on a baking sheet and roast for 25 minutes or until golden and tender.
- Let cool slightly, then transfer to a food processor.
- Add Greek yogurt, lemon juice, and tahini (if using). Blend until smooth.
- Adjust seasoning if needed and transfer to a serving bowl.
- Garnish with fresh parsley and serve with veggies or pita bread.
Notes
- Store in an airtight container in the fridge for up to 3 days.
- For extra flavor, roast a garlic clove with the cauliflower.
- Replace Greek yogurt with dairy-free yogurt for a vegan version.
