Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 avocado, sliced
  • 1 cup baby spinach
  • 1/2 cucumber, diced
  • 1/2 cup shredded carrots
  • 1/4 cup chopped red cabbage
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Rinse quinoa under cold water and drain.
  2. Cook quinoa in 2 cups of water for 15 minutes or until fluffy.
  3. Let quinoa cool slightly.
  4. Assemble the bowl by layering quinoa, spinach, cucumber, carrots, red cabbage, and avocado.
  5. Drizzle with olive oil and lemon juice.
  6. Sprinkle with salt and black pepper.
  7. Toss lightly before serving.

Notes

  • Store leftovers in an airtight container for up to 2 days.
