Ingredients
- 1 cup quinoa
- 2 cups water
- 1 avocado, sliced
- 1 cup baby spinach
- 1/2 cucumber, diced
- 1/2 cup shredded carrots
- 1/4 cup chopped red cabbage
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse quinoa under cold water and drain.
- Cook quinoa in 2 cups of water for 15 minutes or until fluffy.
- Let quinoa cool slightly.
- Assemble the bowl by layering quinoa, spinach, cucumber, carrots, red cabbage, and avocado.
- Drizzle with olive oil and lemon juice.
- Sprinkle with salt and black pepper.
- Toss lightly before serving.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Add grilled chicken or tofu for extra protein.
- Swap quinoa with brown rice if preferred.
