Ingredients
- 2 cups cooked macaroni
- 6 hard-boiled eggs, chopped
- 1/4 cup Greek yogurt
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Cook macaroni according to package instructions, then drain and cool.
- In a bowl, mix Greek yogurt, mustard, vinegar, paprika, salt, and pepper.
- Fold in chopped eggs, celery, and red onion.
- Gently combine the dressing with the cooled macaroni.
- Chill for at least 30 minutes before serving.
