A refreshing and tangy pasta salad with the crunch of dill pickles, perfect for a healthy side dish.
Ingredients
- 8 oz whole wheat pasta
- 1 cup chopped dill pickles
- 1/2 cup diced red onion
- 1/4 cup fresh dill, chopped
- 1/2 cup plain Greek yogurt
- 2 tbsp Dijon mustard
- 1 tbsp pickle juice
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Cook pasta according to package instructions, then drain and rinse with cold water.
- In a large bowl, mix Greek yogurt, Dijon mustard, pickle juice, black pepper, and salt.
- Add cooled pasta, chopped pickles, red onion, and fresh dill to the bowl.
- Toss until the pasta is evenly coated with the dressing.
- Chill for at least 30 minutes before serving.
Notes
- Use whole wheat pasta for extra fiber.
- Adjust pickle juice for more tanginess.
- Store leftovers in the fridge for up to 3 days.
