Ingredients
- 2 cups whole-grain or baked Doritos, crushed
- 1 lb lean ground turkey or chicken
- 1 small onion, diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup low-fat shredded cheddar cheese
- 1/2 cup plain Greek yogurt
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Brown ground turkey in a skillet over medium heat. Add onion and bell pepper, cook until softened.
- Stir in black beans, corn, diced tomatoes, and spices. Simmer for 5 minutes.
- Remove from heat and mix in Greek yogurt.
- Layer half the crushed Doritos in a baking dish. Top with the turkey mixture, then remaining Doritos.
- Sprinkle cheese evenly over the top.
- Bake for 20 minutes or until cheese melts and bubbles.
