Ingredients

  • 2 cups whole-grain or baked Doritos, crushed
  • 1 lb lean ground turkey or chicken
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup low-fat shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F.
  2. Brown ground turkey in a skillet over medium heat. Add onion and bell pepper, cook until softened.
  3. Stir in black beans, corn, diced tomatoes, and spices. Simmer for 5 minutes.
  4. Remove from heat and mix in Greek yogurt.
  5. Layer half the crushed Doritos in a baking dish. Top with the turkey mixture, then remaining Doritos.
  6. Sprinkle cheese evenly over the top.
  7. Bake for 20 minutes or until cheese melts and bubbles.
