Healthy Double Cheddar Bacon Meatloaf Bites are a delicious and protein-packed snack or meal. These mini meatloaves combine lean ground meat, sharp cheddar, and crispy bacon for a flavorful and satisfying dish.
Ingredients
- 1 lb lean ground beef (or turkey)
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup breadcrumbs
- 1 egg
- 1/4 cup finely diced onion
- 2 cloves garlic, minced
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 strips cooked bacon, crumbled
- 1/4 cup additional shredded cheddar for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix all ingredients except the extra cheddar for topping.
- Shape the mixture into 12 equal-sized balls.
- Place in a greased muffin tin or on a baking sheet.
- Top each meatloaf bite with remaining cheddar.
- Bake for 20-25 minutes until cooked through.
- Let cool slightly before serving.
Notes
- For crispier bites, broil for 1-2 minutes at the end.
- These freeze well for quick meals later.
