Description
A simple and healthy skillet recipe featuring caramelized onions and juicy chicken thighs.
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 large onion, thinly sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp paprika
- 2 cloves garlic, minced
- 1/4 cup chicken broth
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken thighs with salt, pepper, thyme, and paprika.
- Add chicken to the skillet, skin-side down, and cook for 6-7 minutes until golden brown.
- Flip chicken and cook for another 5 minutes. Remove from skillet and set aside.
- In the same skillet, add sliced onions and cook for 10 minutes, stirring occasionally, until caramelized.
- Add minced garlic and cook for 1 more minute.
- Return chicken to the skillet, nestling it into the onions.
- Pour in chicken broth, cover, and simmer for 15 minutes.
- Uncover and cook for 5 more minutes to thicken the sauce.
- Serve hot.
Notes
- Use a heavy-bottomed skillet for even cooking.
- Don’t rush caramelizing the onions—low and slow yields the best flavor.
- You can substitute boneless chicken thighs if preferred.
