A simple and healthy chicken burrito recipe that’s quick to make and packed with flavor.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked brown rice
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 4 whole wheat tortillas
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup shredded cheese
- 2 tbsp Greek yogurt or sour cream
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken with cumin, paprika, garlic powder, salt, and pepper.
- Cook chicken for 6-7 minutes per side until fully cooked. Let it rest, then slice.
- Warm tortillas in a dry pan or microwave for 20 seconds.
- Assemble burritos by layering rice, beans, corn, chicken, red onion, cilantro, lettuce, tomatoes, cheese, and yogurt.
- Fold the sides of the tortilla inward and roll tightly.
- Serve immediately or wrap in foil for later.
Notes
- Use rotisserie chicken for a quicker option.
- Add avocado or salsa for extra flavor.
- Store leftovers in the fridge for up to 2 days.
