Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked brown rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 4 whole wheat tortillas
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheese
  • 2 tbsp Greek yogurt or sour cream


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season chicken with cumin, paprika, garlic powder, salt, and pepper.
  3. Cook chicken for 6-7 minutes per side until fully cooked. Let it rest, then slice.
  4. Warm tortillas in a dry pan or microwave for 20 seconds.
  5. Assemble burritos by layering rice, beans, corn, chicken, red onion, cilantro, lettuce, tomatoes, cheese, and yogurt.
  6. Fold the sides of the tortilla inward and roll tightly.
  7. Serve immediately or wrap in foil for later.
