Ingredients

  • 2 cups cottage cheese
  • 4 cups mixed vegetables (carrots, celery, peas, corn)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic. Cook until softened.
