Description
A simple and healthy vegetable soup made creamy with cottage cheese. This dish is packed with nutrients and easy to prepare.
Ingredients
- 2 cups cottage cheese
- 4 cups mixed vegetables (carrots, celery, peas, corn)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic. Cook until softened.
- Add mixed vegetables and cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add cottage cheese, salt, pepper, and thyme. Stir well.
- Cook for another 5 minutes until heated through.
- Serve hot.

- Use low-fat cottage cheese for a lighter version.
- You can blend half the soup for a smoother texture.
