A fresh and flavorful dip that combines beans, corn, and veggies for a healthy snack or appetizer.
Ingredients
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine black beans, corn, red bell pepper, avocado, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
- Pour the dressing over the bean and veggie mixture.
- Gently toss everything together until well coated.
- Serve immediately with tortilla chips or refrigerate for 30 minutes to let flavors blend.
Notes
- Store leftovers in an airtight container in the fridge for up to 2 days.
- For extra spice, add diced jalapeño or a pinch of chili powder.
