A moist and flavorful bread combining tart cranberries and zesty orange for a healthy treat.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh cranberries
- 1 tbsp orange zest
- 3/4 cup orange juice
- 1/4 cup vegetable oil
- 1 egg
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
- Add cranberries and orange zest. Stir to coat.
- In another bowl, whisk orange juice, oil, and egg.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the loaf pan. Bake for 50-55 minutes.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use fresh cranberries for best flavor.
- Replace half the flour with whole wheat for extra fiber.
- Store in an airtight container for up to 3 days.
