Description
A simple and healthy version of drunken noodles made in a crock pot for easy preparation.
Ingredients
- 8 oz rice noodles
- 1 lb chicken breast, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tbsp sriracha
- 1/4 cup fresh basil, chopped
- 1 lime, juiced
Instructions
- Place chicken, bell pepper, broccoli, and garlic in the crock pot.
- Mix soy sauce, fish sauce, brown sugar, and sriracha in a bowl. Pour over the ingredients in the crock pot.
- Cook on low for 4 hours or high for 2 hours.
- Add rice noodles and cook for an additional 15 minutes until tender.
- Stir in fresh basil and lime juice before serving.
Notes
- Adjust sriracha for preferred spice level.
- For a vegetarian version, replace chicken with tofu.
- Use gluten-free soy sauce if needed.
