Description

A simple and healthy version of drunken noodles made in a crock pot for easy preparation.


Ingredients

  • 8 oz rice noodles
  • 1 lb chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp sriracha
  • 1/4 cup fresh basil, chopped
  • 1 lime, juiced


Instructions

  1. Place chicken, bell pepper, broccoli, and garlic in the crock pot.
  2. Mix soy sauce, fish sauce, brown sugar, and sriracha in a bowl. Pour over the ingredients in the crock pot.
  3. Cook on low for 4 hours or high for 2 hours.
  4. Add rice noodles and cook for an additional 15 minutes until tender.
  5. Stir in fresh basil and lime juice before serving.

Notes

  • Adjust sriracha for preferred spice level.
  • For a vegetarian version, replace chicken with tofu.
  • Use gluten-free soy sauce if needed.
